Head up. Eyes up. Not just when you’re talking or taking an order, but also when you’re busy. When you’re making a drink, or doing something else. Pick someone out from the crowd and let them know that all of the work that you’re doing at that moment is just for them. Or will be soon, when it’s their turn in the spotlight. You have to know what is going on in your bar for both security and service. You can’t do that if you’re staring at your mats.
